Our favorite entertaining and party food.  SO GOOD.
Just in time for the Superbowl.  Not that we follow any kind of sports in our home – but this is a watching at home sporting event food, right?
Texas Caviar I Recipe

Texas Caviar

Prep Time: 15 Min + (Depending on how fast you chop :D)
Ready In:  1 Hr 15 Min
Serves:  64 (as a party dip)


  • 1/2 onion, chopped
  • 1 green bell pepper, chopped (we also like to add another sweet pepper – red, yellow or orange)
  • 1 bunch green onions, chopped (i usually only use half a bunch)
  • 2 jalapeno peppers, chopped
  • 1 tablespoon minced garlic
  • 1 pint cherry tomatoes, quartered (or 2 romas, seeded)
  • 1 (8 ounce) bottle zesty Italian dressing
  • 1 (15 ounce) can black beans, drained
  • 1 (15 ounce) can black-eyed peas, drained
  • 1/2 teaspoon ground coriander
  • 1 bunch chopped fresh cilantro


  1. In a large bowl, mix together onion, green bell pepper, green onions, jalapeno peppers, garlic, cherry tomatoes, zesty Italian dressing, black beans, black-eyed peas and coriander.
  2. Cover and chill in the refrigerator approximately 2 hours. Toss with desired amount of fresh cilantro to serve.
